If you’re into flavour, quality and knowing where your meat comes from, you’ll love our range of specialty meats. We keep things simple, but we don’t cut corners. Everything we stock is about proper taste, real quality, and knowing you’re getting something better than what you’ll find at the big supermarket chains.

From grass fed beef to handmade sausages and wild-caught seafood, here’s a closer look at the different types of specialty meats you’ll find in our shop.

Types of specialty meats we stock

Grass fed beef and lamb

We’re big fans of grass fed beef and lamb. It’s better for the animals, better for the land, and honestly, better on your plate. Grass fed meat has a richer flavour, it’s leaner, and it cooks beautifully, whether you’re doing a roast, throwing steaks on the BBQ, or making a hearty stew.

Our specialty meats include cuts like scotch fillet, T-bone, rump, and brisket – all grass fed and full of flavour. The lamb is tender and clean-tasting, perfect for slow cooking, grilling, or pan frying. And because it’s all pasture raised, you’re getting meat the old-school way, nothing weird added, no shortcuts.

Free range pork

Our pork is free range, which means the pigs are raised outside with space to move, dig and do their thing. This makes a big difference. The meat is juicier, has more depth, and the fat has a clean, sweet taste that brings out the best in whatever you’re cooking.

Whether you want belly for crackling, shoulder for slow roasting, or cutlets for a quick fry-up, our specialty meats section always has great pork options. The bacon and ham we carry are also made from free range pork, so even your sandwiches and brekkie can be a cut above.

Hormone-free meats

We only stock hormone-free meats. It’s one of those things that just makes sense. No artificial stuff, no growth boosts, just meat the way it should be. It’s better for your health, and the flavour is more natural too.

This includes all our grass fed beef, lamb, pork and poultry. Everything in our specialty meats fridge and freezer is hormone-free. If you care about what you’re eating (and feeding your family), this is something worth choosing.

Handmade sausages

There’s something really satisfying about a proper sausage, not the mass-produced kind that’s mostly filler, but a handmade one that’s all meat, herbs and spice.

Our specialty meats range includes a good variety of handmade sausages. Some of our best sellers are chicken and chive, a mild, juicy option that kids love too, and spicy beef, which brings a bit of kick without blowing your head off.

We also do classic pork and fennel, lamb and rosemary, and other rotating flavours depending on the week. They’re made fresh, no weird bits, no preservatives, just meat, seasoning, and good texture. Throw them on the BBQ, in a pasta, or have them with mash, easy and tasty.

Whole carcass options

For people who want the full experience or who are doing big family events, we offer whole carcass options. This is a real specialty meats choice. It’s ideal for spit roasts, traditional butchering, or just stocking up your freezer with cuts the way you like them.

You can get a whole lamb, pig, or side of beef: butchered your way or left whole. Some customers go in with a friend or neighbour to share the cost and the meat. It’s a good value option, and lets you try cuts you don’t usually get in pre-packed trays.

We also do nose-to-tail butchery, so if you want organs, bones, or fat for cooking or dog food, we’ve got you sorted.

Wild-caught or locally sourced seafood

While we focus on meat, our specialty meats also include top-quality seafood. We stick to wild-caught or locally farmed options, nothing imported or dodgy.

Things like wild barramundi, snapper, prawns, and mussels come through regularly. We work with trusted fishers and suppliers, so you know what you’re buying is fresh and comes from Aussie waters.

It’s the kind of seafood that tastes like the ocean, clean, firm, and packed with flavour. We don’t overstock either, just what’s in season and in good condition.

Seasonal or rare cuts

One of the best parts about shopping for specialty meats is finding something a bit different. We stock seasonal and rare cuts that you won’t see everywhere.

This could be things like beef cheeks, lamb necks, pork jowl, or even kangaroo and goat now and then. These cuts are often cheaper but packed with flavour, perfect for slow cooking, braising, or getting creative in the kitchen.

We also bring in small runs of special meats during certain seasons. Think venison, duck, turkey, or offal for those who want to explore nose-to-tail cooking. We’ll always tell you how to cook it if you’re not sure.

Why specialty meats matter

Specialty meats are about quality, plain and simple. They’re for people who care about what goes on their plate, not just the taste, but how the animal was raised, how it was butchered, and what’s (not) added to it.

You don’t have to be a chef to enjoy better meat. Whether you’re making a quick stir fry or slow-roasting a shoulder for the weekend, starting with good meat makes it all easier and tastier.

And honestly, once you get used to real flavour, it’s hard to go back.

Bulk butcher orders from Currumbin Fair Butcher Shop

We’re a small, local butcher who takes care with what we do. We keep our specialty meats fresh, we only stock what we’d eat ourselves, and we’re always happy to have a chat if you’re after something specific or want tips on cooking.

You won’t find vacuum-sealed meat from halfway around the world here, just honest, proper food. Our regulars know the difference, and new customers usually don’t take long to taste it either.
